1 cup (125g) of green vegetable, tender stem broccoli, snow peas,
½ a red bell pepper
1 cup Thai Basil leaves (use regular fresh basil if you cannot find Thai Basil)
2 spring onions
For the Sauce
3 tbsp Blue Dragon Oyster Sauce
1 tbsp Blue Dragon Fish Sauce
1 tbsp dark soy sauce
1 tbsp sugar
1 tbsp of Chinese rice wine or dry sherry
Instructions
Prepare noodles per packet directions - make sure they are a little al dente and cold for frying.
Mix Sauce in a small bowl.
Heat oil in wok or large heavy based frying pan over high heat.
Add garlic and chili and cook for 10 seconds. Then add beef and vegetables at the same time.
Cook until the beef is just brown (around 2 minutes) then add spring onion, noodles and sauce and cook for 1 minute until the sauce reduces and coats the noodles.
Remove from heat and immediately add basil, toss until just wilted, then serve immediately.
