A delicious creamy yet spicy stir fry, perfect for those meat-free Mondays!

Ingredients

  • 1 tbsp vegetable oil
  • 1 red pepper, sliced
  • 75g green beans, cut in half
  • 75g mushrooms, sliced
  • 1 zucchini, cut into strips
  • 2 shallots, sliced
  • 1 Blue Dragon Chilli Coconut Stir Fry Sauce

Instructions

  1. Heat the oil in a wok and add the vegetables, stir fry for 2-3 minutes.
  2. Pour over the Chilli Coconut Sauce and simmer for 1 minute.
  3. Serve with rice or noodles.

Notes

To get a great crunch to your vegetables such as peppers and mange tout when you are stir frying, add 3-4 tablespoons of water to your wok while cooking.
