Coconut Milk Tapioca and Bananas

  • 6 ripe bananas, peeled and sliced
  • 1 cup (200 g) sugar
  • 3/4 cup (130 g) medium tapioca
  • 3 cans (1.2 L) Blue Dragon Coconut Milk
  • 1 tablespoon (15 mL) vanilla extract
  • 1 handful unsalted peanuts, roasted and chopped


  1. Soak the tapioca in water for 20 minutes. Drain and set aside.
  2. Sprinkle bananas with sugar.
  3. Heat 2 of the cans of coconut milk in a saucepan.
  4. As soon as it starts boiling, add the tapioca and cook for 15 minutes, stirring constantly.
  5. When the tapioca is translucent, add the bananas and sugar, and cook another 10 minutes.
  6. Turn off the heat and stir in the last can of coconut milk. Pour the mixture into small bowls and sprinkle with peanuts.
