Classic Baked Mac & Cheese with Coconut Milk

Ingredients

  • 8 ounces of macaroni or other small pasta (if you don't have a scale that worked out to about 3 cups of small shells for me - dry)
  • 2 tablespoons of butter
  • 2 tablespoons of flour
  • 1 can of Blue Dragon Coconut Milk Light
  • 2 cups of grated cheddar cheese
  • 2 cups of bread crumbs
  • 1/2 cup of grated parmesan
  • 1 tablespoon of olive oil

Instructions

  1. Preheat oven to 375.
  2. Cook the macaroni until al dente. Drain and set aside.
  3. Place the butter in a saucepan over medium heat. Once melted stir in the flour.
  4. Mix well.
  5. Slowly add the coconut milk, stirring as you go.
  6. Cook over medium heat for two minutes.
  7. Add the cheddar cheese.
  8. Stir until the cheese melts and the sauce is creamy.
  9. Pour the sauce over the cooked pasta and mix well.
  10. Pour into a baking dish.
  11. In a small bowl mix the bread crumbs, parmesan and olive oil together.
  12. Spread the bread crumb mixture over the mac a& cheese in the baking dish.
  13. Place in the oven and bake for about 20 minutes or until the bread crumb topping is a deep golden brown.
