Ingredients

  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced 
  • 1 cup broccoli florets
  • 1 carrot, sliced diagonally
  • 1 rib celery, thinly sliced
  • 1/2 red pepper, sliced
  • 4 green onions, sliced
  • 1 cup snow peas, trimmed and sliced diagonally
  • 1 cup canned baby corn, halved lengthwise
  • 1 tbsp minced ginger
  • 1 sachet (140 mL) Blue Dragon Chilli Coconut Stir Fry Sauce
  • 1/3 cup vegetable broth
  • Medium egg noodles (2 nests)
  • 1/4 cup dry roasted unsalted cashews
  • 2 tbsp fresh chopped cilantro 

Instructions

  1. Heat oil in a wok or large sauté pan set over high heat.  
  2. Add garlic, broccoli, carrot, celery and red pepper to pan. Stir fry for 3 minutes.
  3. Add green onions, snow peas, baby corn, ginger and Blue Dragon Chilli Coconut Stir Fry Sauce and broth into the wok. Cook for 4 to 5 minutes until heated through and vegetables are tender crisp. 
  4. Serve with noodles. Garnish with cashews and cilantro.
