Ingredients
4 Large baking potatoes
150g Cheddar cheese, grated
50g butter
50g Spring onions, finely chopped
100g Bacon, cooked until golden and chopped
100g Canned corn kernels, drained
100ml Blue Dragon Thai Sweet Chilli Sauce

Instructions
Preheat oven to 220 degrees celsius. Prick the potatoes all over with a fork, spray with a little oil then bake 40 – 45 minutes before removing and allowing to cool slightly.
Cut each potato into halves, then scoop out most of the flesh. Place this flesh in a bowl along with half of the cheddar cheese, butter, spring onions, bacon, corn and sweet chilli sauce, mash well and place back into potato skins. Top with remaining cheddar cheese and place back into the oven for 10 – 15 minutes or until cheese is melted.
