Ingredients

  • 6-8 Blue Dragon Spring Roll Wrappers 
  • 1 pound of lean ground beef 
  • 2 tablespoons of diced onion
  • a pinch of salt and pepper 
  • 1 cup of grated cheddar cheese 
  • oil for frying

Instructions

  1. Place the ground beef and diced onion in a large fry pan. 
  2. Cook over medium heat until cooked completely. Add the salt and pepper. 
  3. Remove from heat and set aside.
  4. Fill a large wide bowl half full of very warm water. *Hint – to make your spring rolls fry up a nice golden brown add 1 tablespoon of granulated sugar to the water.
  5. Open the package of spring roll wrappers.
  6. Working with one wrappers at a time, gently immerse the wrapper in the water and soak for 10-15 second until it is pliable but don’t completely soft.
  7. Remove from the water and place on a smooth working surface. Let rest for at least 20 seconds. The wrapper will become completely flexible and ready to roll.
  8. Place about 2 tablespoons of the cooked ground beef lengthwise on one end of the wrapper, leaving about 1 inch at the bottom. Top with some grated cheese.
  9. Now it’s time to roll your spring roll.
  10. Be sure to roll them tightly and rub a little water with your finger on the end to make sure it seals tightly. 
  11. Place your rolls in a deep fryer or large pot with vegetable oil heated to 350 degrees. Cook them in small batches – 3 or 4 at a time depending on the size of your fryer or pot. Turn them often while cooking. Cook until they are a nice golden colour – about 2 minutes.
  12. Serve whole or cut in half or smaller as an appetizer.
