Ingredients

  • 2 cups (300 g) flour
  • 1 cup (120 g) grated coconut
  • 1 tablespoon (12.5 g) baking powder
  • 1 pinch salt
  • 1/2 cup (100 g) brown sugar
  • 1 large egg
  • 1 cup (250 mL) Blue Dragon Coconut Milk
  • 3 tablespoons (45 mL) melted butter
  • 2 ripe bananas, mashed

Instructions

  1. Preheat oven to 400 F (200 C).
  2. Line muffin tins with 12 paper or silicone liners.
  3. In a large bowl, combine all the dry ingredients.
  4. In another bowl, beat egg, then whisk in coconut milk, melted butter, and banana puree.
  5. Stir the moist ingredients into the dry ingredients; do not overmix.
  6. Spoon batter into lined muffin tin, and bake for 16 to 20 minutes, until the muffins are lightly browned.
  7. Remove from the oven and let cool on a rack.
